Black Bean & Corn Salsa
This black bean and corn salsa is super easy and comes together so quickly. It can be serves as an appetizer, snack or side dish. It can also be used to top a taco or taco salad, or rolled up in your burrito. It's so yummy and has so many possibilities.

Ingredients:
- 1 15 ounce can whole kernal corn, drained
- 1 15 ounce can black beans, drained
- 2-4 tablespoons diced white onion
- 1 medium tomato, diced (about 1/2 cup)
- 1 large jalapeño, diced
- 1 tablespoon minced garlic
- 1 tablespoon chopped cilantro
- 2 teaspoons lime juice
- 1 teaspoon coarse ground black pepper
- 1/4 teaspoon cayenne pepper
Directions:
- Combine all ingredients in a medium sized mixing bowl. Mix well. Serve with chips (I prefer Tostitos black bean & garlic tortilla chips) or use to top some tacos.
*Store in an airtight container in the refrigerator for up to 3 days.
*Ingredients can be changed according to your preferences. You can use less jalapeño or substitute about 1/4 cup of bell pepper if you don't like spice. You can also omit the cayenne pepper if you don't like spice.
