Broccoli and Cheese Soup

Broccoli and Cheese Soup

This delicious recipe is so easy to whip up. It has yummy seasonings to add subtle burst of flavor. It pairs well with bread to make it a complete, well-rounded meal.

Ingredients:

  • 1/2 stick unsalted butter
  • 1/2 onion, diced
  • 1 1/2 tablespoons minced garlic
  • 1/4 cup all purpose flour
  • 2 cups chicken broth
  • 2 cups heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 3 cups fresh brocolli florrets
  • 1  cup shredded carrots
  • 1 teaspoon paprika
  • salt and pepper to taste

Directions:

  1. Add butter and onion to a 5 quart dutch oven on medium-low heat. Stir butter around until melted, making sure not to scorch.
  2. Mix in flour and garlic.
  3. Stir in chicken broth.
  4. Add brocolli, carrots and seasonings. Stir well.
  5. Increase heat to medium-high. Cover and bring to a boil.
  6. Reduce heat and stir well. Simmer for 20 minutes until veggies are tender.
  7. Add in cheese and stir until melted.
  8. Stir in heavy cream.
  9. Serve warm with bread for dipping, if desired.

Serves: 4-6
