Buckeyes

This recipe is super fun and easy. It comes together in a flash and everyone love these bite-sized snacks. They are great to gift to friends and family through the holiday season as well.

Ingredients:

  • 1 cup peanut butter
  • 5 tablespoons unsalted butter, room temperature
  • 2 cups powdered sugar
  • 2 cups semi-sweet chocolate chips or milk chocolate candy melts
  • 1 teaspoon pure vanilla extract

Directions:

  1. Prepare a large cookie sheet lined with parchment paper and set aside.
  2. Cream the butter and peanut butter together with an electric mixer.
  3. Mix in vanilla.
  4. Add in powdered sugar half a cup at a time, mixing well after each addition.
  5. Pinch of half tablespoon sized pieces, and roll into balls.
  6. Place rolled peanut butter balls onto your prepared baking sheet. Chill for about 20 minutes until firm.
  7. Microwave chocolate in 30 second intervals, stirring well each time until fully melted.
  8. Use a toothpick to dip the balls. You can cover completely with the chocolate or leave a small part of uncovered peanut butter at the top. Return each ball to the parchment paper after dipping, for chocolate to harden. Enjoy!

*Store in an airtight container in refrigerator or at room temperture for up to one week.

*If you used chocolate chips and your chocolate is not wanting to harden, you can chill in the fridge for about 10-15 minutes to get it to harden.

*This is a great recipe to make with the kiddos. You can let them roll the balls up and dip them for a fun activity.

Make about 35-40 buckeyes
