Buckeyes
This recipe is super fun and easy. It comes together in a flash and everyone love these bite-sized snacks. They are great to gift to friends and family through the holiday season as well.

Ingredients:
- 1 cup peanut butter
- 5 tablespoons unsalted butter, room temperature
- 2 cups powdered sugar
- 2 cups semi-sweet chocolate chips or milk chocolate candy melts
- 1 teaspoon pure vanilla extract
Directions:
- Prepare a large cookie sheet lined with parchment paper and set aside.
- Cream the butter and peanut butter together with an electric mixer.
- Mix in vanilla.
- Add in powdered sugar half a cup at a time, mixing well after each addition.
- Pinch of half tablespoon sized pieces, and roll into balls.
- Place rolled peanut butter balls onto your prepared baking sheet. Chill for about 20 minutes until firm.
- Microwave chocolate in 30 second intervals, stirring well each time until fully melted.
- Use a toothpick to dip the balls. You can cover completely with the chocolate or leave a small part of uncovered peanut butter at the top. Return each ball to the parchment paper after dipping, for chocolate to harden. Enjoy!
*Store in an airtight container in refrigerator or at room temperture for up to one week.
*If you used chocolate chips and your chocolate is not wanting to harden, you can chill in the fridge for about 10-15 minutes to get it to harden.
*This is a great recipe to make with the kiddos. You can let them roll the balls up and dip them for a fun activity.
