Cast Iron Toasted Pepitas

This little pumpkin seeds taste amazing and smell amazing! They are the perfect way to top soups, salads and other dishes. They are also a great snack, and they come together in a flash!

Ingredients:

  • 2 tablespoons salted butter
  • 1 cup raw pepitas (hulled pumpkin seeds)
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon salt

Directions:

  1. In a large cast iron skillet, melt the butter over medium-low heat.
  2. Once the butter is completely melted, add the pepitas and seasonings. Increase to medium heat.
  3. Stir frequently until the pepitas are lightly brown and aromatic. This should take about 4 minutes.
  4. Transfer to a plate to cool.
  5. Serve as a snack, in a salad, or even in soup!

*Store in at room temperature in an airtight container for up to 5 days.
