Cherry Truffles

Cherry Truffles

This recipe is super delicious and great to gift to the family. Even the person who doesn't like cherries is sure to love it. it requires a little extra time, but its worth it.

Ingredients:

  • 4 1/2 cups powdered sugar
  • 6 tablespoons unsalted butter, room temperature
  • 3 tablespoons sweetened condensed milk
  • 1/2 teaspoon pure vanilla extract
  • 12 ounces maraschino cherries, drained and dried
  • 2 10 ounce packages milk chocolate candy melts (I prefer Ghirardelli)
  • Sprinkles (optional)

Directions:

  1. Prepare two large baking sheets lined with parchment paper. Set aside.
  2. Finely chop your cherries and set aside.
  3. Combine powdered sugar, butter, sweetened condensed milk, vanilla and cherries in a large bowl. Mix together with an electric mixer until light and fluffy.
  4. Use a tablespoon to scoop heaps onto your prepared baking sheets. (don't worry about the shapes, you'll fix those later) Chill for 1-3 hours in fridge. For best results, chill overnight.
  5. Microwave the chocolate in 30 second intervals, stirring well each time until fully melted.
  6. Roll the scoops of the cherry mixture into balls, and dip each one into the melted chocolate. Try to be quick, as the melted chocolate may try to melt your cherry balls.
  7. Place the covered balls onto your prepared baking sheets. If adding sprinkles, top them while they are still wet, so sprinkles adhere well. They harden somewhat quickly.
  8. Enjoy!

*Store in an airtight container at room temperature for up to one week.

Makes about 40-50 truffles
