Chicken Casserole

This recipe is super easy and cheap. It has few ingredients and leaves very minimal cleanup. It is always a crowd pleaser at my house. It also keeps well as leftovers, if you make a little extra.

Ingredients

  • 1 pound chicken breast tenders
  • 1 cup sour cream
  • 1 can cream of chicken soup
  • 1 sleeve Ritz crackers, crushed
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon coarse ground black pepper
  • 1/4 teaspoon salt (optional)

Directions

  1. In a large pot on high heat, boil the chicken for 30 minutes. Drain water and shred.
  2. Preheat oven to 350 F. Grease an 8x8 baking dish and set aside.
  3. Add chicken to a medium mixing bowl along with sour cream, cream of chicken soup and spices. Add this mixture in an even layer to your prepared baking dish. Top with the Ritz crackers.
  4. Bake for 20-30 minutes. Enjoy!

*Store in an airtight container in the refrigerator for up to two days.

*When crushing your crackers, add them all to a Ziplock bag and zip it up tightly with no air in the bag. Roll a rolling pin over the bag until you get the desired consistency. I find this is the easiest way to not make a mess without a food processor.
