Chicken Casserole
This recipe is super easy and cheap. It has few ingredients and leaves very minimal cleanup. It is always a crowd pleaser at my house. It also keeps well as leftovers, if you make a little extra.

Ingredients
- 1 pound chicken breast tenders
- 1 cup sour cream
- 1 can cream of chicken soup
- 1 sleeve Ritz crackers, crushed
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon coarse ground black pepper
- 1/4 teaspoon salt (optional)
Directions
- In a large pot on high heat, boil the chicken for 30 minutes. Drain water and shred.
- Preheat oven to 350 F. Grease an 8x8 baking dish and set aside.
- Add chicken to a medium mixing bowl along with sour cream, cream of chicken soup and spices. Add this mixture in an even layer to your prepared baking dish. Top with the Ritz crackers.
- Bake for 20-30 minutes. Enjoy!
*Store in an airtight container in the refrigerator for up to two days.
*When crushing your crackers, add them all to a Ziplock bag and zip it up tightly with no air in the bag. Roll a rolling pin over the bag until you get the desired consistency. I find this is the easiest way to not make a mess without a food processor.
