Chicken Fried Rice

Chicken Fried Rice

This recipe is so delicious and easy. It is perfect for the person who doesn't like to eat spicy foods. I like to eat it for lunch with some yummy pinto beans, or make it as a side with my favorite Mexican dishes.

Ingredients:

  • 1 1/2 cups long grain white rice
  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • 1 tablespoon minced garlic
  • 2 cups chicken broth
  • 1/2 cup frozen corn
  • 1/2 cup mixed frozen peas and carrots
  • 1-2 teaspoons salt

Directions:

  1. Melt the butter in a large skillet on medium heat. Add in the olive oil and the rice. Sauté the rice for 5 minutes, stirring frequently.
  2. Add in the minced garlic and frozen vegetables. Mix them in. Add in the chicken broth, then the salt. Stir.
  3. Bring to a boil then reduce heat to a low simmer. Simmer the rice for 15-20 minutes, until the broth has dissolved.
  4. Serve warm with pinto beans or refried beans.

*Store in an airtight container in the refrigerator for up to 2 days.
