Chocolate Peanut Butter Ritz Cookies
These cookies make a great treat any time of the year. They come together quick and easy. They don't leave much mess behind either. They make great gifts during the holiday season, and are very thoughtful.

Ingredients:
- About 1 1/2 sleeves Ritz crackers
- creamy peanut butter
- 10 ounces candy melts, white or milk chocolate (I prefer Ghirardelli)
Directions:
- Smear peanut butter across a cracker and top with another, making sandwiches. Repeat until crackers all crackers have been used. Set aside.
- In a small glass bowl, melt candy melts in microwave. Start at 15 seconds, then stir well. Microwave in 30 second intervals after, until chocolate is melted and smooth. Stir well each time to make sure chocolate does not seize up.
- Lay a decent sized piece of parchment paper across the counter to place cookies on.
- Dip cracker sandwiches in chocolate, covering completely. Use a fork to remove from chocolate, and place on parchment paper. Repeat until all sandwiches are covered.
- Leave cookies to harden at room temperature about 10-15 minutes. Enjoy!

*You can have fun with these, and drizzle the tops with colored candy melts after they harden. You can also add chopped peanuts to the top, before letting harden, for a little extra crunch.
