Cilantro Lime Rice

Cilantro Lime Rice

This rice is very easy and leaves behind very little mess. It pairs well with a variety of dishes, but can also be served alone. It is great for a quick lunch, and also a great side for dinner.

Ingredients:

  • 4 tablespoons (1/2 stick) unsalted butter
  • 1 cup long-grain white rice
  • 1 3/4 cups chicken broth
  • zest of two limes
  • 1/4 cup chopped fresh cilantro
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Directions:

  1. In a medium saucepan, melt one tablespoon of the butter over medium-high heat. Add the rice and sauté about 2-3 minutes, until it begins to brown.
  2. Add the broth and bring to a boil over high heat. Reduce the heat to medium-low and cover. Simmer for about 15 minutes, until tender.
  3. Melt the remaining butter in a microwave safe bowl. Pour the butter over the cooked rice. Stir in the cilantro and lime zest. Add in salt and pepper to taste.
  4. Serve warm.

*Store in an airtight container in the refrigerator for up to 2 days.
