Cream of Celery Soup
This yummy cream of celery soup is a great dish to eat alone on a cool evening. It is also great to cook with. It tastes much better than the store-bought kind, and comes together in a flash. After trying this, you won't want to purchase the processed kind again.

Ingredients:
- 2 cups celery, diced
- 3/4 cup white onion, diced
- 1 tablespoon minced garlic
- 2 tablespoons unsalted butter
- 1/3 cup flour
- 1 1/2 cups chicken broth
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Directions:
- Melt butter in a medium pot over medium heat.
- Add onions, garlic, celery, salt and pepper. Sauté 5-7 minutes until celery is soft and onions are translucent.
- Mix in flour and cook for one minute.
- Add in chicken broth. Increase to high heat and bring to a boil.
- Lower heat and let simmer, uncovered, for 15 minutes.
- Blend with an immersion blender until creamy.
- Enjoy!
*Store in refrigerator in an airtight container for up to 3 days.
*Freeze in an airtight container for up to one month.
