Cream of Celery Soup

This yummy cream of celery soup is a great dish to eat alone on a cool evening. It is also great to cook with. It tastes much better than the store-bought kind, and comes together in a flash. After trying this, you won't want to purchase the processed kind again.

Ingredients:

  • 2 cups celery, diced
  • 3/4 cup white onion, diced
  • 1 tablespoon minced garlic
  • 2 tablespoons unsalted butter
  • 1/3 cup flour
  • 1 1/2 cups chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions:

  1. Melt butter in a medium pot over medium heat.
  2. Add onions, garlic, celery, salt and pepper. Sauté 5-7 minutes until celery is soft and onions are translucent.
  3. Mix in flour and cook for one minute.
  4. Add in chicken broth. Increase to high heat and bring to a boil.
  5. Lower heat and let simmer, uncovered, for 15 minutes.
  6. Blend with an immersion blender until creamy.
  7. Enjoy!

*Store in refrigerator in an airtight container for up to 3 days.

*Freeze in an airtight container for up to one month.
