Elote Bowl
This quick and easy street corn bowl is so delicious. It comes together super fast and leaves little to no mess behind. It tastes amazing and can be served as an easy meal, snack or a side dish.

Ingredients:
- 2 15 ounce cans whole kernal corn
- 1 tablespoon margarine or salted butter
- 2 tablespoons mayonaise (I prefer Hellman's)
- 1 tablespoon sour cream
- 1/4 cup cotija cheese
- 1 tablespoon cilantro
- 1 tablespoon lime juice
- 1/2 tablespoon Trader Joe's Elote seasoning* (see notes)
- hot sauce (I prefer Valentino's or Cholula)
Directions:
- In a medium pot over medium-high heat, add the corn and the margarine or butter. Heat until corn slightly begins to boil, then drain but do not rinse.
- Add the corn to a medium sized bowl along with the remaining ingredients, except the hot sauce. Mix them together well. Top with your desired amount of hot sauce. Enjoy!
*Store in an airtight container in the fridge for up to two days. Serves well cold.
*If you don't have the Trader Joe's seasoning, you can add in 1/4 teaspoon of paprika and 1/8 teaspoon of cayenne pepper. OR you can add in 1/2 teaspoon of chili powder.
*You can really get creative with this and make it your own. You can eat it by itself or scoop it up on tortilla chips. You can also mix and match some add ins like crushed hot cheetos, fresh jalapeños and more!
*You can serve this as a snack, side or quick and easy meal with chips.
