Frito Corn Salad
This delicious salad is always a crowd pleaser. It is fresh and super colorful. All of the flavors and textures compliment each other perfectly. You can't go wrong when brining this to pot lucks and serving at gatherings.

Ingredients:
- 3 15 ounce cans whole kernal corn
- 1 tablespoon fresh cilantro
- 1 yellow bell pepper, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 red onion or green onion, diced
- 2 cups shredded mexican cheese
- 1 teaspoon pepper
- 1 cup miricle whip or mayonaise
- 1 bag chili cheese fritos
Directions:
- Cook corn and drain.
- Add all ingredients to a large bowl and mix well.
- Refrigerate for at least 2 hours or overnight. Serve cold.
*Store in an airtight container in refrigerator for up to 2 days.
*Add in chips right before serving for best texture. They tend to get soggy as they sit in the salad.
