Frosted Cookie Bars

This recipe is super fun for holidays and birthdays. Its also great just to have if you're craving something sweet. It pairs deliciously with ice cream. The bars are so chewy and soft. You can never go wrong with a great big cookie!

Ingredients:

  • 3/4 cup Butter Crisco
  • 1 cup light brown sugar
  • 1/3 cup sugar
  • 2 eggs, room temperature
  • 1 tablespoon pure vanilla extract
  • 2 cups all purpose flour
  • 1 tablespoon corn starch
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup jimmies

Frosting

  • 1/2 stick (1/4 cup) salted butter, room temperature
  • 1 1/3 cups powdered sugar
  • 1/2 teaspoon pure vanilla extract
  • 1 1/2 tablespoons heavy cream
  • gel food coloring (optional)

Directions:

  1. Preheat oven to 350 F. Grease and line a 9x13 inch baking dish with parchment paper. Leave wings on the two longer sides to make the cookie easy to remove later. These will serve as handles. Set aside.
  2. In a medium mixing bowl, whisk together flour, salt, baking soda, and corn starch. Set aside.
  3. In a large mixing bowl, cream together the crisco and sugars with an electric mixer. Add in the vanilla. Add in the eggs, one at a time, mixing well after each addition.
  4. Mix in the flour 1/2 cup at a time until gone. Be sure not to over mix. Fold in the sprinkles.
  5. Add the batter into your prepared baking dish. Smooth into an even layer. Bake for 25 minutes. Remove from oven and let cool for about 15 minutes in the baking dish. Remove from the baking dish and let cool completely on a wire rack.

Frosting

  1. After the cookie has cooled, you'll want to make the frosting. Start by creaming the butter in a medium bowl with an electric mixer. Mix in the powdered sugar and heavy cream until smooth.
  2. You can mix in food coloring now, if you'd like. Spread the frosting onto the cooled cookie in an even layer. Sprinkle additional jimmies on top, if desired.
  3. Cut the cookie into bars. You can make 12-16 depending on how big you want them and how many people you need to serve.

*Store in an airtight container at room temperature for up to 2 days.

*This recipe is great for holidays and birthdays. You can just change the color of the frosting and/ or the sprinkles to coordinate.

*If you love chocolate you can use 1/2 cup of semi-sweet chocolate chips. You can use them in place of the sprinkles, or add them with the sprinkles. You could also do 1/2 cup M&Ms instead.
