Grilled Roast Beef Sandwich
This sandwich is so easy and delicious! It pairs well with soup for dipping, or potato chips for an easy meal.

Ingredients:
- 4-5 slices thin cut roast beef
- 1 thick cut slice creamy havarti cheese
- 1/2 cup spinich leaves
- 2 slices white bread
- mayonnaise (I prefer Hellman's)
Directions:
- Cover both sides of one slice of bread with a thin layer of mayonnaise. Cover only one side of the other slice with a thin layer of mayonnaise.
- Heat the roast beef in the microwave for about 20-30 seconds. (optional)
- Add the cheese to the slice of bread with mayo on both sides. Add the roast beef next, folding each slice in half. Add the other slice of bread, making sure the mayo is on the outside.
- Toast the sandwich on medium-high heat in a small skillet for about 1 1/2-2 minutes on each side.
- Remove the slice of bread that doesn't have the cheese on it. Add the spinich and the slice of bread back, toasted half on the outside.
- Serve with mushroom bisque or potato chips. Enjoy!
