Hot Dogs and Rice

This is a quick and easy recipe to prepare when you don't really feel like cooking. It comes together so quickly, but tastes as if you spent hours on it. It's also super cheap, so if you're on a budget, I highly recommend.

Ingredients:

  • 3 cups white rice
  • 6 cups water
  • 1 teaspoon olive oil
  • 8 count bun length hot dogs, sliced into rounds
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon sesame seeds
  • 3/4 teaspoon chipotle chili pepper
  • chives or green onions (optional)

Directions:

  1. Add rice and water to a medium saucepan and bring to a boil.
  2. Reduce heat, cover and let simmer for 20 minutes or until water is gone and rice is tender.
  3. Remove rice from heat and let sit covered for at least 5 minutes.
  4. In a medium skillet, heat olive oil over medium-high heat, then add sliced hot dogs.
  5. Sauté for about 8 minutes until a little brown.
  6. Add in garlic and sauté for 30 seconds until fragrant.
  7. Toast sesame seeds in center of pan for 30 seconds.
  8. Remove hot dogs from heat and add to a small bowl. Add in chipotle chili pepper 1/4 teaspoon at a time, coating hot dogs well.
  9. Mix hot dogs into rice, along with chives or green onions, if desired.
  10. Enjoy!
