Italian Salad

Italian Salad

This salad is super quick and easy to prepare. It tastes super similar to the Olive Garden salad, but even better! It pairs well with any pasta, pizza and most soups. It is the perfect addition to an Italian dinner for a well rounded meal.

Ingredients:

  • 1 bag of mixed romaine and butter lettuce
  • 1 cup of fresh grated parmesan cheese
  • 1/4 cup diced red onion
  • 1/3 cup mild banana peppers, drained
  • 1- 1/2 cups cherry or grape tomatoes, cut into halves
  • 1/3 cup black olives, cut into halves (optional)
  • 1-1/2 cups Italian seasoned croutons
  • 1/3-1/2 cup Italian dressing (I prefer Wishbone)

Directions:

  1. Add the lettuce, cheese, onions, banana peppers, tomatoes, olives and croutons to a large bowl and toss. You can top with additional ingredients for a prettier looking salad.
  2. Toss with dressing right before serving or allow guests to add their own. Serve with club crackers if desired.

*This salad pairs well with most dressings, if you and/or guests don't want the Italian. This dressing just makes it the most like the Olive Garden salad. My guests also like ranch, blue cheese, and Catalina dressings as an optional substitute. It would also pair well with any other dressing that you love!

*If desired, you can slice Pepperoncini peppers instead of using the banana peppers for a spicier salad.

*This salad is the pefect side for Lasagna, pastas and soups!
