Loaded Peanut Butter Cookies

These cookies are so yummy and perfect for summer. They are a play on an old favorite ice cream topping, but on the most delicious peanut butter cookies. They come together so quick and easy and are loaded with the best flavors from your childhood to bring back those memories and keep making more!

Ingredients:

For the Cookies:

  • 1 cup all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup butter Crisco
  • 1/2 cup creamy peanut butter
  • 3/4 cup sugar, plus more for later
  • 3/4 cup light brown sugar
  • 2 tablespoons honey
  • 1 teaspoon vanilla
  • 2 large eggs

For the Topping:

  • 1/4 cup granulated sugar
  • 1/4 cup rainbow sprinkles
  • 1/4 cup chopped roasted peanuts

Directions:

  1. Preheat oven to 350 F. Line a large baking sheet with parchment paper and set aside.
  2. In a small bowl, mix together all of the topping ingredients. Set aside.
  3. In a medium mixing bowl, whisk together flour, baking soda and salt. Set aside.
  4. In a separate medium bowl, cream together Crisco, peanut butter, sugars and vanilla with an electric mixer until light and fluffy.
  5. Mix in eggs, one at a time, scraping the bowl after each addition.
  6. Mix in the honey.
  7. Mix in flour half a cup at a time.
  8. Scoop cookie dough by rounded tablespoon onto your prepared baking sheet. Roll cookie dough balls into the topping mixture, coating them well. Make sure dough balls are about 1 1/2 inches apart.
  9. Bake for 10 minutes. Let cool on baking sheet for about 10 minutes. Enjoy!

*Store in an airtight container for up to one week.

*Make sure to only bake one pan of cookies at a time, or they will not bake correctly.
