Mini Tacos
This meal is super quick and easy to make. It leaves behind very little mess, so there is minimal clean-up. These tacos are also really cheap, for another added bonus. Kids love them, because they are little. Adults love them, because they are easy and convenient. They are a definite crowd pleaser!

Ingredients:
- 1 family sized bag Tostinos Scoop Chips
- 1 pound ground beef
- 1 taco seasoning packet
- 1 pound shredded Mexican cheese or taco cheese blend
- taco sauce (optional)
- sour cream (optional)
- diced tomatoes (optional)
- shredded lettuce (optional)
Directions:
- Preheat oven to 350 F. Line two large cookie sheets with parchment paper. Set aside.
- In a medium skillet on medium heat, brown beef and drain. Return beef to skillet and add the taco seasoning and about 1/4 cup water. Mix in seasoning well with beef. Turn eye to simmer to keep warm.
- Add the scoop chips to the lined baking sheets. Place them close together, so you can fit more on each sheet. Add the about 1/2 tablespoon of beef to each chip. Top with the shredded cheese.
- Bake for 10 minutes until cheese is melted. Serve warm with any kind of toppings and dips that you like with your tacos.
