No Bake Cookies
These cookies come together very quick and easy. They are always a favorite in my family. If I'm looking for something to cook up fast that will please everyone, this recipe is always my go-to. You can't go wrong with these classic no bake treats.

Ingredients:
- 2 1/2 cups quick oats
- 3/4 cup peanut butter
- 1 stick unsalted butter
- 1/2 milk
- 1 1/2 cups granulated sugar
- 1/4 cup unsweetened cocoa powder
- 2 teaspoons pure vanilla extract
Directions:
- Prepare a decent sized sheet of parchment paper on your counter, or in two medium cookie sheets, to drop cookies on when finished.
- Add the oats and peanut butter to a medium bowl and set aside.
- Add butter, cocoa powder, sugar and milk to a medium pot on medium-high heat.
- Stir together to incorporate fully until mixture begins to boil. Allow to boil for exactly one minute.
- Then remove from heat, and immediately begin stirring the boiling mixture into the oats and peanut butter. Stir until fully incorporated, and mix in the vanilla.
- Use a tablespoon to drop heaps of the mixture onto your prepared parchment paper.
- Allow 20-30 minutes to set. Enjoy!
*Store cookies in an airtight container at room temperature for up to one week. Store in an airtight container in refrigerator for up to two weeks. Store in an airtight container in freezer for up to three months.
*You want to be sure to boil only on medium-high heat, and not to increase the heat. Otherwise your chocolate may scorch.
*You want your dry ingredients and parchment paper ready, before you begin preparing your wet mixture. This mixture is somewhat time-sensitive and you don't want to leave extra room for error.
*You will see the cookies begin to set after about 15 minutes, but you want to leave them there for the remaining time to ensure they finish setting properly.
*Sometimes I'll use rolled oats if I don't have quick oats on hand. They always turn out just as delicious, and no one can tell the difference.
