Peanut Brittle
This sweet and salty treat is so much fun for the Holiday season. It's such a classic that everyone loves and adores. It makes such a yummy little snack and a thoughtful gift for loved ones.

Ingredients:
- 2 cups sugar
- 1 1/2 sticks salted butter, cut into tablespoons
- 1/3 cup light corn syrup
- 1/3 cup heavy cream
- 1 tablespoon vanilla bean paste
- 1 1/4 teaspoons baking soda
- 2-3 cups dry roasted peanuts
- 1-2 teaspoons salt
Directions:
- Preheat the oven to 200F. Place a silicone mat on a 9x13 cookie sheet and place in the oven to keep warm.
- Place a 5 quart nonstick pot fitted with a candy thermometer on the stove over medium heat. Add in the butter, sugar, corn syrup, and heavy cream. Heat until the mixture reaches 300F. Whisk periodically and brush the sides with a wet pastry brush as needed. This will keep the mixture from crystallizing around the sides.
- Once the caramel has reached 300F, remove from heat and whisk in the vanilla bean paste and baking soda. The mixture will bubble.
- Mix in the desired amount of peanuts.
- Spread the mixture evenly across your heated baking sheet using a greased rubber spatula. Sprinkle the top with your desired amount of salt.
- Allow to cool completely. This will take about 45 minutes to an hour. Break the peanut brittle apart into your desired sized chunks.
