Peanut Butter Blossoms

Peanut Butter Blossoms

This recipe is super fun and easy to make. You can customize it and really have fun with it. Peanut butter is a sure crowd pleaser too. As long as nobody has any allergies, I feel like you can't go wrong. The kids love these and the adults do too!

Ingredients:

  • 1 1/2 cups all purpose flour
  • 3/4 teaspoons baking powder
  • 1/2 cup granulated sugar, plus 1/4 cup for coating
  • 1/2 cup brown sugar
  • 3/4 cup peanut butter
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1 large egg
  • 1 teaspoon vanilla extract
  • milk chocolate Hershey's Kisses

Directions:

  1. Preheat oven to 375 F. Line two large cookie sheets with parchment paper. Set aside. Add the 1/4 cup of sugar to a small bowl and set aside to roll dough in later. Unwrap about 24 kisses and set aside also.
  2. In a medium mixing bowl, whisk together flour and baking powder. Set aside.
  3. Cream together butter and peanut butter with an electric mixer. Add in sugar and brown sugar. Cream together with the butter and peanut butter, scraping the bowl as needed.
  4. Mix in egg and vanilla.
  5. Mix in flour 1/2 cup at a time, until gone.
  6. Roll the dough into one inch balls, then roll them in the 1/4 cup of sugar that you set aside earlier. Place them about 2-3 inches apart on your lined baking sheets.
  7. Bake for 8-10 minutes, until cookies are golden and have spread. Thumbprint your hot cookies, and let them cool on the baking sheets for 2-3 minutes. Place the kisses in the thumbprints.

*Store cookies in an airtight container at room temperature for up to 2 days.

*Thumbprinting the cookies and placing the kisses on after they have cooled a little, helps your kisses not to melt all over the top of the cookies. However, you want to add the kisses while the cookies are still just a bit warm, that way they will stay on the cookies. If you wait too long, the kisses may fall off of the cookies later.

*After you have completed step 5, if you feel that your dough is a bit too soft and/or sticky, you can place it in the refrigerator for about 30 minutes to get it to a more workable texture.

*This is a great recipe to make with your kiddos. You can let them unwrap the kisses while you're preparing the dough, and they can add the kisses to the cookies later.

*This recipe can be made to be really festive and fun looking. You can color the dough with a little gel food coloring for holidays and other events. For example, I like to make mine different pastel colors for Easter. You can also roll them in assorted colors of sanding sugar, instead of granulated sugar. You use different kisses for a fun touch as well. I like to add the hot cocoa kisses at Christmas time.
