Peanut Butter Cookies

These are my favorite peanut butter cookies. They are so thin and delicious. They are a little crunchy on the outside while being chewy in the center. They have the yummiest texture and flavor. They also come together so quick and easy for the perfect dessert.

Ingredients:

  • 1 cup all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup butter Crisco
  • 1/2 cup creamy peanut butter
  • 3/4 cup sugar, plus more for later
  • 3/4 cup light brown sugar
  • 1 teaspoon vanilla
  • 2 large eggs

Directions:

  1. Preheat oven to 350 F. Line a large baking sheet with parchment paper and set aside.
  2. In a medium mixing bowl, whisk together flour, baking soda and salt. Set aside.
  3. In a separate medium bowl, cream together Crisco, peanut butter, sugars and vanilla with an electric mixer until light and fluffy.
  4. Mix in eggs, one at a time, scraping the bowl after each addition.
  5. Mix in flour half a cup at a time.
  6. Scoop cookie dough by rounded tablespoon onto your prepared baking sheet. Roll cookie dough balls into granulated sugar, if desired. Make sure dough balls are about 1 1/2 inches apart.
  7. Bake for 10 minutes. Let cool on baking sheet for about 10 minutes. Enjoy!

*Store in an airtight container for up to one week.

*Make sure to only bake one pan of cookies at a time, or they will not bake correctly.

Makes about 32-36 cookies
