Perfect Roast Chicken
This chicken is very easy and comes together quickly. It is nice and juicy on the inside with a beautiful golden skin. The flavors come together deliciously for the main coarse to any meal.

Ingredients:
- 4 pound young chicken, thawed
- 2 lemons
- 2-3 tablespoons minced garlic
- 1 1/2 cups margarine
- 3 tablespoons poultry seasoning
Directions:
- Preheat oven to 450 F.
- Pull out the bag inserted into the chicken. You won't need it for this recipe. Rinse the chicken.
- Place the chicken into a small baking dish. Cut a lemon into fourths and stuff them into the hole. Also stuff 1/2 cup of the margarine. Tie the legs together with baking twine.
- Cover the top of the chicken in the remaining margarine. Sprinkle over the seasoning.
- Cut the other lemon in half and place one on each side of the chicken in the dish. Sprinkle the minced garlic around the chicken in the bottom of the dish.
- Bake for an hour to an hour and twenty minutes until a thermometer inserted into the thigh reads 165 F and the top is golden brown. If you would like the top to be more golden, you can broil the chicken on high, once it has cooked through, for 2-5 minutes. Watch it carefully to ensure that it doesn't burn.
- Cut the cooked chicken apart and enjoy.
