Strawberry Muffins
These muffins come together pretty quickly and easily. They are so fresh and delicious. They make a great breakfast, and are perfect for a snack too.

Ingredients:
- 1 cup all purpose flour, plus one tablespoon for strawberries
- 1/2 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2/4 cup milk
- 1 large egg
- 2 1/2 tablespoons vegetable oil
- 1 1/2 tablespoons unsalted butter, melted
- 1 teaspoon pure vanilla extract
- 1 1/2 cups fresh strawberries, diced
Directions:
- Preheat oven to 400 F. Line 8-10 wells of a muffin pan with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder and salt.
- In a separate bowl, whisk together milk, egg, oil, melted butter, and vanilla.
- Whisk the egg mixture into the flour mixture until just combined.
- Add the tablespoon of flour to the diced strawberries, coating them well. Fold the strawberries into batter.
- Divide the batter among the muffin cups, filling the wells about 2/3 the way full.
- Bake for about 25 minutes until golden brown on top and a toothpick inserted in the middle comes out clean.
- Let cool for a few minutes before serving. Enjoy!
