Strawberry Muffins

Strawberry Muffins

These muffins come together pretty quickly and easily. They are so fresh and delicious. They make a great breakfast, and are perfect for a snack too.

Ingredients:

  • 1 cup all purpose flour, plus one tablespoon for strawberries
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2/4 cup milk
  • 1 large egg
  • 2 1/2 tablespoons vegetable oil
  • 1 1/2 tablespoons unsalted butter, melted
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups fresh strawberries, diced

Directions:

  1. Preheat oven to 400 F. Line 8-10 wells of a muffin pan with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder and salt.
  3. In a separate bowl, whisk together milk, egg, oil, melted butter, and vanilla.
  4. Whisk the egg mixture into the flour mixture until just combined.
  5. Add the tablespoon of flour to the diced strawberries, coating them well. Fold the strawberries into batter.
  6. Divide the batter among the muffin cups, filling the wells about 2/3 the way full.
  7. Bake for about 25 minutes until golden brown on top and a toothpick inserted in the middle comes out clean.
  8. Let cool for a few minutes before serving. Enjoy!

*Store in an airtight container at room temperature for up to 3 days.
