Strawberry Shortcake with Biscuits

This recipe comes together very easily. It is the perfect use of your leftover breakfast biscuits, or you can make fresh ones. It is so light and fresh. This is the perfect dessert to have after a heavy meal to satisfy your sweet tooth. It also makes a great breakfast.

Ingredients:

  • 1 pound strawberries, cut into quarters
  • 3/4 cup sugar
  • 2 cups heavy cream
  • 1 teaspoon pure vanilla extract
  • 6 biscuits
  • 6 mint sprigs, optional garnish

Directions:

  1. In small bowl, toss the strawberries with the 1/2 cup of the sugar. Set at room temperature for one hour.
  2. Add the heavy cream, vanilla and remaining 1/4 cup sugar to a medium bowl. Beat with an electric mixer on high speed until fluffy and the cream holds a soft peak when the beater is pulled out of the bowl.
  3. Split a biscuit in half and place the bottom on a small plate. Put a layer of whipped cream on the biscuit, followed by a layer of the strawberries. Place the top of the biscuit to make a sandwich. Garnish with mint, if desired. Repeat with remaining biscuits. Enjoy!
