Stuffed Bell Peppers

These peppers are easy and cheap. I love making meals that don't cost a lot of money, but taste like they did. This is definitely one of them! It doesn't require a ton of clean up and it only takes about 10-15 minutes to prepare, before baking. This is super delicious and filling.

Ingredients:

  • about 1.25 pounds ground beef
  • 4 large green bell peppers
  • 3 additional assorted bell peppers, diced
  • 1/2 cup white onion, diced
  • 1 box Rice a Roni Spanish Rice
  • 1-2 cups of shredded Mexican cheese

Directions:

  1. Preheat oven to 350 F. Grease a 9x11 baking dish and set aside.
  2. Add beef to a large skillet on medium heat. Cook beef until browned and drain. Add beef back to skillet, along with the diced peppers and onion. Sauté about 5 minutes, until the veggies are tender. Lower temperature to simmer to keep warm.
  3. Cook the rice according to the directions on the box, omitting the tomato sauce. In a large bowl, mix the cooked rice into the beef and veggies.
  4. Prepare your green bell peppers by cutting the tops off and removing the ribs and seeds. Place the peppers into your prepared baking dish, standing them upright so the filling will not run out.
  5. Fill all of your peppers to the tops with the beef mixture. Sprinkle enough of the cheese on top to cover the filling.
  6. Bake the peppers for about 20 minutes until tender.
  7. Serve warm.
