Sunflower Butter Cookies
These cookies are so delicious! They are much like peanut butter cookies, but they have the flavor of sunflower seeds. They are quite habit forming. You could sit and eat a bunch of them if you're not careful because they are just that good!

Ingredients:
- 1 cup all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup butter Crisco
- 1/2 cup sunflower butter
- 3/4 cup sugar, plus more for later
- 3/4 cup light brown sugar
- 1 teaspoon vanilla
- 2 large eggs
Directions:
- Preheat oven to 350 F. Line a large baking sheet with parchment paper and set aside.
- In a medium mixing bowl, whisk together flour, baking soda and salt. Set aside.
- In a separate medium bowl, cream together Crisco, sunflower butter, sugars and vanilla with an electric mixer until light and fluffy.
- Mix in eggs, one at a time, scraping the bowl after each addition.
- Mix in flour half a cup at a time.
- Scoop cookie dough by rounded tablespoon onto your prepared baking sheet. Roll cookie dough balls into granulated sugar, if desired. Make sure dough balls are about 1 1/2 inches apart.
- Bake for 8 minutes. Let cool on baking sheet for about 5-8 minutes. Enjoy!
*Store in an airtight container for up to one week.
*Make sure to only bake one pan of cookies at a time, or they will not bake correctly.
