Taco Pasta

This yummy pasta comes together in a flash. It is easy to put together, and doesn't leave behind a big mess. Family and friends love it, so it's the perfect dish for any gathering!

Ingredients:

  • 1 pound ground beef
  • 2 cups bow tie noodles
  • 2-3 cups Mexican blend shredded cheese
  • 8 ounce jar mild taco sauce
  • taco seasoning packet
  • 1/2 cup of green onion, diced
  • 1 1/2 cups corn salsa
  • cilantro, chopped (optional topping)

Directions:

  1. Add noddles to a large pot on high heat, along with 1/2 teaspoon salt. Bring to a boil, drain and set aside.
  2. In a medium skillet on medium-high heat, brown the ground beef. Drain the grease and return the beef to medium-low heat. Add in the taco seasoning, along with 1/2 cup water. Cook beef until water is mostly gone. Rmove from heat and set aside.
  3. In a 5 quart pot on medium heat, add the corn salsa and green onions. Sauté for two minutes.
  4. Add the beef to the veggies and mix well. Then add half of the cheese and taco sauce, mixing well.
  5. Add in your noodles a little at a time, mixing after each addition. Add in remaining taco sauce and cheese.
  6. Garnish with cilantro, salt and pepper. Serve warm.

*Store in an airtight container in refrigerator for up to two days. Heat before serving.

*If you don't want to use bow tie noodles, you can sub in any of your favorite pasta noodle. Sometimes I like to use rotini or pasta shells.
