Taco Pasta
This yummy pasta comes together in a flash. It is easy to put together, and doesn't leave behind a big mess. Family and friends love it, so it's the perfect dish for any gathering!

Ingredients:
- 1 pound ground beef
- 2 cups bow tie noodles
- 2-3 cups Mexican blend shredded cheese
- 8 ounce jar mild taco sauce
- taco seasoning packet
- 1/2 cup of green onion, diced
- 1 1/2 cups corn salsa
- cilantro, chopped (optional topping)
Directions:
- Add noddles to a large pot on high heat, along with 1/2 teaspoon salt. Bring to a boil, drain and set aside.
- In a medium skillet on medium-high heat, brown the ground beef. Drain the grease and return the beef to medium-low heat. Add in the taco seasoning, along with 1/2 cup water. Cook beef until water is mostly gone. Rmove from heat and set aside.
- In a 5 quart pot on medium heat, add the corn salsa and green onions. Sauté for two minutes.
- Add the beef to the veggies and mix well. Then add half of the cheese and taco sauce, mixing well.
- Add in your noodles a little at a time, mixing after each addition. Add in remaining taco sauce and cheese.
- Garnish with cilantro, salt and pepper. Serve warm.
*Store in an airtight container in refrigerator for up to two days. Heat before serving.
*If you don't want to use bow tie noodles, you can sub in any of your favorite pasta noodle. Sometimes I like to use rotini or pasta shells.
