Toasted Turkey and Provolone Sandwich

This sandwich is so yummy and fulfilling. It is very fresh and cheesy, depending on how much cheese you like. It is great for lunch or dinner. It pairs well with soup, chips and fries.

Ingredients:

  • 2 slices white sandwich bread (I prefer Pepperidge Farm)
  • 8 slices oven roasted deli turkey, thinly sliced
  • 2-4 slices provolone cheese
  • 2-4 thin slices tomato
  • 1/4 cup fresh spinach leaves
  • mayonaise for bread, to taste (I prefer Hellman's)
  • 1 tablespoon salted butter for cooking, plus more to butter bread

Directions:

  1. Butter bread, as much or as little as you like.
  2. Add cheese to slice of bread. Then add the turkey, then spinach, then tomato.
  3. Spread mayonaise on opposite side of bread to butter. Top sandwich with mayo facing down.
  4. Heat butter in medium skillet over medium-high heat until melted.
  5. Add sandwich to skillet. Grill about 2-4 minutes on each side, until cheese is melted and bread is golden.
  6. Enjoy!

*If you have trouble getting the turkey warm, you can zap it in the microwave for 15-30 seconds before adding it to the sandwich.

*This sandwich pairs really well with butternut squash soup.
