Tomato Basil Soup

Tomato Basil Soup

This hearty soup is super quick and easy to make. It requires no preparation, and minimal clean-up. It is very filling and a crowd favorite. Its perfect for the cooler weather.

Ingredients:

  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon minced garlic
  • four 14.5 ounce cans fire roasted-tomatoes
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon basil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • fresh basil, for garnish (optional)

Directions:

  1. In a 5 quart dutch oven, heat the olive oil over medium heat. Add in the garlic and sauté for 3 minutes.
  2. Add in the tomatoes and chicken broth. Increase to medium-high heat and bring to a low boil.
  3. Decrease heat to low. Add in seasonings, and slowly stir in cream.
  4. Blend soup with an immersion blender until smooth.
  5. Serve warm and Enjoy!

*Store in an airtight container in refrigerator for up to two days.

*Serve with grilled mozzarella sandwiches for a well-rounded meal.
