White Chocolate Chip Lemon Cookies

These cookies are super quick and easy to make. With their light and bright flavor, they are perfect for the spring and summer months. The white chocolate chips taste so good with the lemon flavor to give them just a little decadence.

Ingredients:

  • 2 1/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup butter Crisco
  • zest of two lemons (about 2 tablespoons)
  • 1 1/2 cups sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla
  • 2 large eggs
  • 2 1/4 cup semi white chocolate chips

Directions:

  1. Preheat oven to 350 F. Line a large baking sheet with parchment paper and set aside.
  2. In a medium mixing bowl, whisk together flour, baking soda and salt. Set aside.
  3. In a small bowl, add the sugar and lemon zest. Work the zest into the sugar with your fingers until the sugar is a pale yellow color.
  4. In a separate medium bowl, cream together Crisco and the suagr mixture with an electric mixer until light and fluffy.
  5. Mix in the vanilla and lemon juice.
  6. Mix in eggs, one at a time, scraping the bowl after each addition.
  7. Mix in flour half a cup at a time.
  8. Fold in white chocolate chips.
  9. Scoop cookie dough by rounded tablespoon onto your prepared baking sheet. Make sure dough balls are about 1 1/2 inches apart.
  10. Bake for 8-10 minutes. Let cool on baking sheet for about 3-5 minutes. Enjoy!

*Store cookies in an airtight container at room temperature for 3-5 days.

*If cookies have risen in the center, lightly tap your baking sheet on the counter to get them to flatten.

Makes about 45-50 cookies
