Chicken Caesar Salad Wraps

Ingredients:

  • 1 pound chicken breast tenders
  • 1/4 cup garlic and parmesan seasoning
  • 1- 1 1/2 cups vegetable oil
  • 5-6 tortillas, one for each chicken tender (I prefer the Mission Spinach & Herb or whole wheat)
  • 1 package butter lettuce salad mix
  • 3 tablespoons- 1/4 cup Caesar salad dressing
  • 1- 1 1/2 cups fresh grated parmesan cheese
  • croutons

Directions:

  1. Add the oil to a large skillet over medium-high heat and preheat the oil to 350F.
  2. While the oil is heating, add the seasoning to a small bowl. Rub a generous amount onto each piece of chicken, covering the tops and the bottoms.
  3. Once the oil is heated, add the chicken to the pan, making sure that the pieces don't touch. Cover with the lid and fry for 5 minutes. Flip the chicken and cover and fry for an additional 5 minutes. Move chicken to a plate lined with paper towels and let sit for 5 minutes.
  4. While the chicken is cooling a little, add the lettuce and your desired amount of dressing to a bowl and toss. Add a little bit of this mixture to the center of each tortilla. Sprinkle your desired amount of cheese over the lettuce along with a few croutons. Add one chicken tender to each and wrap them up. Enjoy with truffle fries for a delicious meal!

*Store the chicken tenders in the fridge in an airtight container for up to 2 days. Prepare the wraps right before serving or they will become soggy in the fridge.

*You can also enjoy these wraps with no meat for an easier and quicker lunch or snack.
