
Chicken Salad

Ingredients:
- 1 pound chicken breast tenders
- 1- 1 1/2 cups Miracle Whip or Mayonaise
- 2/3- 1 cup celery, chopped
- 1/2- 2/3 cup white or red onion, diced
- 8 croissants (optional)
Directions:
- Add the chicken to a medium pot over high heat. Boil for about 20 minutes. Remove the chicken from the heat and drain.
- Shred the chicken and add to a medium bowl that has a lid. Mix in your desired amount of Miracle Whip or mayo, starting with a cup and adding more to reach your desired consistency. Mix in your desired amount of celery and onion.
- Add the lid to the bowl and refrigerate for at least an hour or overnight.
- Serve on fresh croissants, King's Hawaiian Rolls, on bread, with crackers or any other way that you'd like to enjoy it.
*Store in an airtight container in the fridge for up to 5 days.
*I would recommend making your sandwiches as you want to eat them, otherwise they may become soggy if you try to refrigerate them with the chicken salad on them.
*Make this ahead of time for meal prep to have as a quick and easy lunch throughout the week.
*This recipe is great for large gatherings to make ahead of time and serve a lot of people.
*You can also use rotisserie chicken or canned chicken to save you time and make this recipe even faster and even easier.
