Chicken Salad

Ingredients:

  • 1 pound chicken breast tenders
  • 1- 1 1/2 cups Miracle Whip or Mayonaise
  • 2/3- 1 cup celery, chopped
  • 1/2- 2/3 cup white or red onion, diced
  • 8 croissants (optional)

Directions:

  1. Add the chicken to a medium pot over high heat. Boil for about 20 minutes. Remove the chicken from the heat and drain.
  2. Shred the chicken and add to a medium bowl that has a lid. Mix in your desired amount of Miracle Whip or mayo, starting with a cup and adding more to reach your desired consistency. Mix in your desired amount of celery and onion.
  3. Add the lid to the bowl and refrigerate for at least an hour or overnight.
  4. Serve on fresh croissants, King's Hawaiian Rolls, on bread, with crackers or any other way that you'd like to enjoy it.

*Store in an airtight container in the fridge for up to 5 days.

*I would recommend making your sandwiches as you want to eat them, otherwise they may become soggy if you try to refrigerate them with the chicken salad on them.

*Make this ahead of time for meal prep to have as a quick and easy lunch throughout the week.

*This recipe is great for large gatherings to make ahead of time and serve a lot of people.

*You can also use rotisserie chicken or canned chicken to save you time and make this recipe even faster and even easier.
