Chocolate Cola Cupcakes
This cupcakes are so delicious! They are a lot easier to serve than a traditional cola cake, but are equally as yummy. They are even better with some vanilla ice cream and CocaCola to drink!

Ingredients:
Cake:
- 1 cups all purpose flour
- 1/2 cup sugar
- 1/2 cup packed dark brown sugar
- 1/4 teaspoon salt
- 2 sticks salted butter, room temperature
- 2 tablespoons unsweetened cocoa powder
- 1/2 cup Coca~Cola (not diet)
- 1/2 teaspoon baking soda
- 1/4 cup buttermilk, room temperature
- 1 large egg, room temperature
- 1 teaspoon pure vanilla extract
Frosting:
- 1 1/2 sticks salted butter, room temperature
- 1/2 cup unsweetened cocoa powder
- 1/4 cup Coca~Cola (not diet)
- 2 cups powdered sugar
Directions:
Cake:
- Preheat oven to 350 F. Line two cupcake pans with 18 liners.
- In a medium bowl, whisk together flour, sugar, brown sugar and salt. Set aside.
- In a small saucepan, bring the butter, cocoa and coke to a boil over medium-high heat, stirring until smooth. Pour into the flour mixture and whisk until smooth.
- In a small bowl, dissolve the baking soda into the buttermilk. Pour into the flour mixture and whisk until smooth.
- Whisk in the egg and vanilla.
- Pour the batter into your prepared baking dish. Bake for about 20 minutes until a toothpick inserted comes out clean. Let cool completely then pipe an even layer of frosting across the top. This frosting is not stiff, so if you try to go high with it, then it will likely fall.
- Serve with vanilla ice cream, if desired.
Frosting:
- In a large bowl, beat the butter with an electric mixer on medium speed until smooth.
- Add the cocoa and coke, and beat on low speed until smooth. Remember to scrape the bowl as needed.
- Beat in one cup of the powdered sugar at a time on medium speed. Remember to scrape the bowl as needed.
*Store in an airtight container at room temperature for up to two days.
