
Cinnamon Sugar Muffins

Ingredients:
For the Muffin:
- 2 3/4 cups all purpose flour
- 1 tablespoon baking powder
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 1 stick (1/2 cup) unsalted butter, melted
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 2 eggs
- 1 1/4 cups whole milk
- 1/4 cup sour cream
- 1 tablespoon pure vanilla extract
For the Coating:
- 2/3 cup sugar
- 1 tablespoon cinnamon
- 1/4 cup salted butter, melted
Directions:
For the Muffins:
- Preheat oven to 425 F. Prepare your muffin tin by adding paper liners and set aside.
- In a large bowl, whisk together flour, baking powder, cinnamon and salt. Set aside.
- In a medium bowl, add melted butter, milk and sugars. Whisk to combine and set aside.
- Whisk in eggs, vanilla and sour cream.
- Add the wet mixture into the dry and whisk until just combined.
- Add the batter into your prepared tin, filling the wells about 3/4 the way full.
- Bake for 5 minutes then lower oven temperature to 350 F. Bake for about 20 additional minutes, until tops are golden and a toothpick inserted comes out clean.
- Once the muffins have cooled, melt the butter for the coating. In separate little bowl, mix together the cinnamon and sugar. Dip the top of the muffin into the butter mixture, then into the cinnamon sugar mixture coating the top evenly. Enjoy!
*Store in an airtight container at room temperature for up to 3 days.
