Cookie Butter Cookies

Ingredients:
For the Coating:
- 1/4 cup sugar
- 1 teaspoon cinnamon
For the Cookies:
- 1 cup all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup butter Crisco
- 1/2 cup creamy cookie butter
- 3/4 cup sugar
- 3/4 cup light brown sugar
- 1 teaspoon vanilla
- 2 large eggs
Directions:
- Preheat oven to 350 F. Line a large baking sheet with parchment paper and set aside. In a small bowl, mix together the cinnamon and sugar for the coating and set aside.
- In a medium mixing bowl, whisk together flour, baking soda, salt and cinnamon. Set aside.
- In a separate medium bowl, cream together Crisco, cookie butter, sugars and vanilla with an electric mixer until light and fluffy.
- Mix in eggs, one at a time, scraping the bowl after each addition.
- Mix in flour half a cup at a time.
- Scoop cookie dough by rounded tablespoon onto your prepared baking sheet. Roll cookie dough balls into the cinnamon-sugar mixture from earlier. Make sure dough balls are about 1 1/2 inches apart.
- Bake for 9-10 minutes. Let cool on baking sheet for about 10 minutes. Enjoy!
*Store in an airtight container for up to one week.
*Make sure to only bake one pan of cookies at a time, or they will not bake correctly.
