Mini Baked Potatoes

Ingredients:
- 1 pound Yukon golden potatoes
- olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 cup salted butter (room temperature) or margarine
- 1/4 cup sour cream
- shredded sharp cheddar cheese
- bacon bits
- chives
Directions:
For the Air Fryer:
- Add the potatoes to the bowl of your air fryer with the olive oil and seasonings. Shake and make sure potatoes are coated well.
- Fry on 400F for 15- 25 minutes. Shake halfway through.
- Using a small knife, cut a square into the top of each potato and scoop out the contents directly under the square. Set aside potatoes.
- Mix together the butter and sour cream. Add to a piping bag or a ziplock bag with the tip snipped off. Pipe a generous dollop into the center of each potato.
- Top with shredded cheese, then bacon bits, then chives. Enjoy as an appetizer or a side dish.
For the Oven:
- Preheat the oven to 400F. Add the potatoes to a medium baking sheet lined with parchment paper.
- Coat the potatoes in the olive oil and seasonings.
- Bake for 35-45 minutes.
- Using a small knife, cut a square into the top of each potato and scoop out the contents directly under the square. Set aside potatoes.
- Mix together the butter and sour cream. Add to a piping bag or a ziplock bag with the tip snipped off. Pipe a generous dollop into the center of each potato.
- Top with shredded cheese, then bacon bits, then chives. Enjoy as an appetizer or a side dish.
