Mini Baked Potatoes

Ingredients:

  • 1 pound Yukon golden potatoes
  • olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 cup salted butter (room temperature) or margarine
  • 1/4 cup sour cream
  • shredded sharp cheddar cheese
  • bacon bits
  • chives

Directions:

For the Air Fryer:

  1. Add the potatoes to the bowl of your air fryer with the olive oil and seasonings. Shake and make sure potatoes are coated well.
  2. Fry on 400F for 15- 25 minutes. Shake halfway through.
  3. Using a small knife, cut a square into the top of each potato and scoop out the contents directly under the square. Set aside potatoes.
  4. Mix together the butter and sour cream. Add to a piping bag or a ziplock bag with the tip snipped off. Pipe a generous dollop into the center of each potato.
  5. Top with shredded cheese, then bacon bits, then chives. Enjoy as an appetizer or a side dish.

For the Oven:

  1. Preheat the oven to 400F. Add the potatoes to a medium baking sheet lined with parchment paper.
  2. Coat the potatoes in the olive oil and seasonings.
  3. Bake for 35-45 minutes.
  4. Using a small knife, cut a square into the top of each potato and scoop out the contents directly under the square. Set aside potatoes.
  5. Mix together the butter and sour cream. Add to a piping bag or a ziplock bag with the tip snipped off. Pipe a generous dollop into the center of each potato.
  6. Top with shredded cheese, then bacon bits, then chives. Enjoy as an appetizer or a side dish.

Makes about 20 small potatoes
