Pancakes

Ingredients:
- 2 1/2 cups all purpose flour
- 4 teaspoons baking powder
- 1/4 cup sugar
- 2 cups whole milk
- 1/4 cup (1/2 stick) salted butter, melted
- 2 eggs
- 1 tablespoon pure vanilla extract
Directions:
- In a large mixing bowl, whisk together the flour, sugar and baking powder. Whisk in the vanilla, milk and melted butter.
- Whisk in the eggs.
- Heat a non-stick skillet to medium heat. Scoop 1/3 cup of batter and pour onto the center of your skillet. Cook until the top begins to bubble. Flip the pancake and cook for about another minute until the bottom is golden. Repeat with remaining batter.
- Serve warm and enjoy!
*To keep done pancakes warm while cooking the rest, place them on a plate and cover with a towel.
*If you are using a really good non-stick skillet, you do not have to grease it. The pancakes will cook more evenly if you don't use grease.
