Pot Roast

Ingredients:
- 2- 2.5 pound chuck roast
- 3-4 tablespoons olive oil
- 1/2 tablespoon salt
- 1 tablespoon coarse ground black pepper
- 1- 1.5 pounds little yellow potatoes
- 1 pound baby carrots
- 4-8 pepperoncini peppers (optional)
- 1/2 cup diced white onion
- 2-4 garlic cloves, smashed
- 4 cups beef broth
- 1/2 cup Worcestershire sauce
- 1/4 cup juice from the pepperoncini peppers
- 2-4 thyme sprigs
- 2 rosemary sprigs
Directions:
- Preheat the oven to 300F.
- Heat a 5-6 quart dutch oven on the stove to medium-high heat. While the dutch oven is heating, rub the chuck roast with olive oil and salt and pepper on all sides. Sear the roast for 6-8 minutes on all sides in the preheated dutch oven. remove the roast and set aside.
- Add in the carrots and sauté for about 6-8 minutes. Add in the onions and sauté until translucent.
- Add the roast back to the pot along with the potatoes, beef broth, Worcestershire sauce, peppers and juice, garlic cloves and herbs.
- Cover the pot with the lid and cook in the oven until the roast reaches a temperature of at least 145F and all of the veggies are fork tender. This will take 2.5-4 hours depending on the size of your roast.
- Once everything has finished cooking, remove the herbs and garlic and discard. Remove the roast and shred. You can add the shredded meat to a serving platter along with all of the veggies and some of the juices for easy serving.
- Serve this warm as is, or with your favorite side dishes. *See suggestions down below.
*Store in an airtight container in the refrigerator for up to 3 days. Reheat before serving.
*You can serve this over a bed of white rice. This is delicious and will also make the meal go further and have more servings.
*You can remove the potatoes once everything has finished cooking and make mashed potatoes out of them. If you would like to do this, remove them while hot and add to a large bowl with 1/4 cup butter, 1/3-1/2 cup whole milk, 1 teaspoon salt and an optional 1/2 teaspoon of garlic powder. Blend with your hand mixer on medium speed or mash by hand until everything is fully incorporated and there are no more lumps. You can serve the roast and veggies over these potatoes with bread or rolls. Macaroni and cheese would also pair well with this.
