Pumpkin Alfredo

Ingredients:

  • 1 pound noodles, cooked to al dente and rinsed and drained (I prefer Alfredo or zuchette)
  • 1/4 cup unsalted butter
  • 1/2 tablespoon minced garlic
  • 1 1/2 cups heavy cream
  • 1/2 cup pumpkin pureé (I prefer Libby's)
  • 1/2 teaspoon ground sage
  • 1/2 teaspoons course ground black pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon dried minced onion or onion powder
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon paprika
  • 1 1/2 cups fresh grated parmesan cheese or white cheddar cheese

Directions:

  1. Add the butter to a large skillet over medium heat. Melt completely. Allow the butter to turn a golden amber color to brown it.
  2. Add in the minced garlic and sauté for 30 seconds. Whisk in the heavy cream.
  3. Whisk in the pumpkin and bring to a low bubble.
  4. Whisk in all of the seasonings.
  5. Stir in the cheese until fully melted and incorporated. Stir in the noodles.
  6. Garnish with fresh sage and grated cheese, if desired. This pairs really well with some quick and easy garlic bread. Enjoy!

*Store in an airtight container in the fridge for up to 2 days. Reheat before serving.
