
Pumpkin Alfredo

Ingredients:
- 1 pound noodles, cooked to al dente and rinsed and drained (I prefer Alfredo or zuchette)
- 1/4 cup unsalted butter
- 1/2 tablespoon minced garlic
- 1 1/2 cups heavy cream
- 1/2 cup pumpkin pureé (I prefer Libby's)
- 1/2 teaspoon ground sage
- 1/2 teaspoons course ground black pepper
- 1/4 teaspoon salt
- 1/4 teaspoon dried minced onion or onion powder
- 1/8 teaspoon nutmeg
- 1/8 teaspoon paprika
- 1 1/2 cups fresh grated parmesan cheese or white cheddar cheese
Directions:
- Add the butter to a large skillet over medium heat. Melt completely. Allow the butter to turn a golden amber color to brown it.
- Add in the minced garlic and sauté for 30 seconds. Whisk in the heavy cream.
- Whisk in the pumpkin and bring to a low bubble.
- Whisk in all of the seasonings.
- Stir in the cheese until fully melted and incorporated. Stir in the noodles.
- Garnish with fresh sage and grated cheese, if desired. This pairs really well with some quick and easy garlic bread. Enjoy!
*Store in an airtight container in the fridge for up to 2 days. Reheat before serving.
