Red Velvet Muffins

Ingredients:
- 2 cups all purpose flour
- 1/4 cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup vegetable oil
- 1/4 unsalted butter, melted
- 1 cup sugar
- 2 large eggs
- 2 teaspoons pure vanilla extract
- 1 cup buttermilk
- 2-4 drops red food coloring
- 1- 1/2 cups cream cheese chips
Directions:
- Preheat oven to 375F. Line two muffin pans with 18 liners.Set aside.
- In a medium mixing bowl, whisk together the flour, cocoa powder, baking powder, baking soda and salt. Set aside.
- In a separate medium mixing bowl, whisk together the butter and sugar. Whisk in the oil and vanilla.Whisk in the eggs.
- Add 1/3 of the flour mixture to the wet mixture and whisk until fully incorporated. Whisk in half of the buttermilk. Whisk in 1/3 of the flour mixture.Whisk in remaining buttermilk.Whisk in remaining flour mixture.
- Mix in the food coloring until you reach your desired shade of red. Fold in the cream cheese chips.
- Divide the batter evenly among your prepared liners, filling each well 3/4 the way full. You can sprinkle the top of each muffin with additional cream cheese chips to get a bakery style look, if desired.
- Bake for 18-22 minutes until a toothpick inserted comes out clean. Let cool for about 10 minutes before eating. Enjoy!
