Red Velvet Muffins

Ingredients:

  • 2 cups all purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup vegetable oil
  • 1/4 unsalted butter, melted
  • 1 cup sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 cup buttermilk
  • 2-4 drops red food coloring
  • 1- 1/2 cups cream cheese chips

Directions:

  1. Preheat oven to 375F. Line two muffin pans with 18 liners.Set aside.
  2. In a medium mixing bowl, whisk together the flour, cocoa powder, baking powder, baking soda and salt. Set aside.
  3. In a separate medium mixing bowl, whisk together the butter and sugar. Whisk in the oil and vanilla.Whisk in the eggs.
  4. Add 1/3 of the flour mixture to the wet mixture and whisk until fully incorporated. Whisk in half of the buttermilk. Whisk in 1/3 of the flour mixture.Whisk in remaining buttermilk.Whisk in remaining flour mixture.
  5. Mix in the food coloring until you reach your desired shade of red. Fold in the cream cheese chips.
  6. Divide the batter evenly among your prepared liners, filling each well 3/4 the way full. You can sprinkle the top of each muffin with additional cream cheese chips to get a bakery style look, if desired.
  7. Bake for 18-22 minutes until a toothpick inserted comes out clean. Let cool for about 10 minutes before eating. Enjoy!
