Valentine's Day Sugar Cookie Sandwiches

Ingredients:

For the Cookies:

  • 2 1/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup butter Crisco
  • 1 1/2 cups sugar
  • 1 teaspoon vanilla
  • 2 large eggs
  • 3/4- 1 cup jimmies sprinkles

For the Frosting:

  • 2 cups powdered sugar 
  • 2 sticks (1 cups) unsalted butter, room temperature
  • 1 teaspoon pure vanilla extract
  • 1/2 tablespoon heavy cream
  • a pinch of salt
  • 1/2 teaspoon whole milk
  • food coloring (optional)

Directions:

For the Cookies:

  1. Preheat oven to 350 F. Line a large baking sheet with parchment paper and set aside.
  2. In a medium mixing bowl, whisk together flour, baking soda and salt. Set aside.
  3. In a separate medium bowl, cream together Crisco and the suagr with an electric mixer until light and fluffy.
  4. Mix in the vanilla.
  5. Mix in eggs, one at a time, scraping the bowl after each addition.
  6. Mix in flour half a cup at a time.
  7. Fold in the jimmies.
  8. Scoop cookie dough by rounded tablespoon onto your prepared baking sheet. Make sure dough balls are about 1 1/2 inches apart.
  9. Bake for 8-10 minutes. Let cool on baking sheet for about 3-5 minutes.

For the Frosting:

  1. In a large mixing bowl, cream the butter with an electric mixer until light and fluffy. 
  2. Add the powdered sugar in one cup at a time, mixing well after each addition. Scrape the bowl as needed. 
  3. Mix in the vanilla, milk, cream and salt until fully incorporated. 
  4. If you're coloring the frosting, separate into 3 bowls and color one of them red, one of them pink and leave one white. Using a spoon, make a stripe of each color on a piece of plastic wrap. Be sure that the stripes are touching, but not mixing together. Fold the plastic so that the first stripe is laying on top of the third stripe. Roll each end of the plastic tight. Cut one end off and place the roll with the open end down in a piping bag fitted with the star tip or on with the tip snipped off.
  5. Pipe the frosting around the center of half the cookies and place the remaining cookies on top to make a sandwich. Enjoy!

*Store cookies in an airtight container at room temperature for up to 3 days.

*If cookies have risen in the center, lightly tap your baking sheet on the counter to get them to flatten.

Makes about 25 cookie sandwiches (about 50 cookies)
