Beef Enchiladas

Beef Enchiladas

This beef enchiladas are surprisingly easy, and super delicious. They require a little preparation, and leave a small mess, but they are worth it! These are perfect for date night, and a family dinner. They are sure to be a crowd pleaser.

Ingredients:

  • 1 pound ground beef
  • 1/2 cup diced green bell pepper
  • 1/2 cup frozen corn
  • 1/2 diced white onion
  • 3  10 ounce cans mild red enchilada sauce
  • 7 ounce can green chilis
  • 1 cup sour cream
  • 12 6 inch flour tortillas
  • 8-12 cups mexican cheese blend
  • 1/4 cup fresh cilantro, chopped (optional)

Directions:

  1. Preheat oven to 375 F. Grease a 9x13 inch baking dish and add one can of the enchilada sauce to the bottom. Set aside.
  2. In a large skillet on medium heat, brown the beef. Drain and return to skillet.
  3. Add in the onion, corn and bell pepper. Cook on medium heat until onions are translucent, about 8 minutes.
  4. Add the beef to a medium mixing bowl. Mix in the sour cream and green chilis. Add about 1/4 cup of the beef mixture to the center of a tortilla. Tuck the side in, then roll closed. Add this to your prepared baking dish. Repeat with remaining tortillas.
  5. Cover the dish and bake for 20 minutes. Remove from oven and cover the top with the desired amount of cheese. Bake for 5 additional minutes until cheese is melted. Sprinkle chopped cilantro over the top, if desired.
  6. Serve warm with rice and beans.

*Store in an airtight container in the refrigerator for up to 2 days. Warm before serving.

*You can substitute the beef for shredded chicken, if you prefer.

*You can use medium enchilada sauce if you like spice, but people who don't are somewhat sensitive to it.
