Beef Enchiladas
This beef enchiladas are surprisingly easy, and super delicious. They require a little preparation, and leave a small mess, but they are worth it! These are perfect for date night, and a family dinner. They are sure to be a crowd pleaser.

Ingredients:
- 1 pound ground beef
- 1/2 cup diced green bell pepper
- 1/2 cup frozen corn
- 1/2 diced white onion
- 3 10 ounce cans mild red enchilada sauce
- 7 ounce can green chilis
- 1 cup sour cream
- 12 6 inch flour tortillas
- 8-12 cups mexican cheese blend
- 1/4 cup fresh cilantro, chopped (optional)
Directions:
- Preheat oven to 375 F. Grease a 9x13 inch baking dish and add one can of the enchilada sauce to the bottom. Set aside.
- In a large skillet on medium heat, brown the beef. Drain and return to skillet.
- Add in the onion, corn and bell pepper. Cook on medium heat until onions are translucent, about 8 minutes.
- Add the beef to a medium mixing bowl. Mix in the sour cream and green chilis. Add about 1/4 cup of the beef mixture to the center of a tortilla. Tuck the side in, then roll closed. Add this to your prepared baking dish. Repeat with remaining tortillas.
- Cover the dish and bake for 20 minutes. Remove from oven and cover the top with the desired amount of cheese. Bake for 5 additional minutes until cheese is melted. Sprinkle chopped cilantro over the top, if desired.
- Serve warm with rice and beans.
*Store in an airtight container in the refrigerator for up to 2 days. Warm before serving.
*You can substitute the beef for shredded chicken, if you prefer.
*You can use medium enchilada sauce if you like spice, but people who don't are somewhat sensitive to it.
