Caramel Apple Crumble Cheesecake

This yummy cheesecake is full of texture and bursting with flavor. It is perfect to quench anyone's sweet tooth. It has a gooey caramel and crunchy oat topping, along with a soft and lush cheesecake filling. This dessert is a definite crowd pleaser!

Ingredients:

Crust:

  • 1/3 cup unsalted butter, melted
  • 1 1/2 packs cinnamon graham crackers
  • 2 tablespoons light brown sugar

Filling:

  • 1/4 cup brown sugar
  • 1/4 cup sugar
  • 1 teaspoon vanilla
  • 1 teaspoon apple pie spice
  • 2 tablespoons cornstarch
  • 2 green apples
  • 16 ounces cream cheese, room temperature

Topping:

  • 1/4 cup all purpose flour
  • 1/4 cup rolled oats
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons unsalted butter, melted
  • caramel sauce

Directions:

  1. Preheat oven to 350 F.
  2. In a food processor, pulse graham crackers until desired consistancy. Add in melted butter and brown sugar and pulse again.
  3. Press into the bottom of a 9 inch springform pan, into an even layer.
  4. Bake for 5 minutes.
  5. In a medium bowl, mix together all of the filling ingredients, except the apples.
  6. In a separate bowl, mix together all of the topping ingredients except the caramel.
  7. Spread the filling evenly over the crust.
  8. Core, peel and slice the apples thinly. Arrange them neatly over the filling.
  9. Sprinkle the topping in an even layer over the apples.
  10. Bake for 30 minutes.
  11. Let cool completely, then drizzle caramel sauce over the top. You can add as much or as little as you like.
