Caramel Apple Crumble Cheesecake

Ingredients:
Crust:
- 1/3 cup unsalted butter, melted
- 1 1/2 packs cinnamon graham crackers
- 2 tablespoons light brown sugar
Filling:
- 1/4 cup brown sugar
- 1/4 cup sugar
- 1 teaspoon vanilla
- 1 teaspoon apple pie spice
- 2 tablespoons cornstarch
- 2 green apples
- 16 ounces cream cheese, room temperature
Topping:
- 1/4 cup all purpose flour
- 1/4 cup rolled oats
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
- 2 tablespoons unsalted butter, melted
- caramel sauce
Directions:
- Preheat oven to 350 F.
- In a food processor, pulse graham crackers until desired consistancy. Add in melted butter and brown sugar and pulse again.
- Press into the bottom of a 9 inch springform pan, into an even layer.
- Bake for 5 minutes.
- In a medium bowl, mix together all of the filling ingredients, except the apples.
- In a separate bowl, mix together all of the topping ingredients except the caramel.
- Spread the filling evenly over the crust.
- Core, peel and slice the apples thinly. Arrange them neatly over the filling.
- Sprinkle the topping in an even layer over the apples.
- Bake for 30 minutes.
- Let cool completely, then drizzle caramel sauce over the top. You can add as much or as little as you like.
